A few years ago when I participated in an online fitness group to try to reclaim my body after one of the babies I came across these amazing little “snacks.” I was cutting back/out refined sugars and such, but quickly found that to deprive myself of sweet stuff all the time just created binge-on-junk issues. So I searched for and found a couple healthy alternatives and they are fabulous!

The first, this No-bake Energy Bite! My kids, hubby and myself LOVE these things. I always ALWAYS make a double batch and even then they don’t last long. However, with the ingredients in them I don’t mind them being the preferred snack food!

It’s an extremely flexible recipe and you can customize it to your heart’s content. Here it is as I originally found it:

Energy Bites
1 c. Oatmeal
1/2 c. Nut butter (I’ve used both natural Peanut Butter and Almond Butter, both are good!)
1/3 c. Honey or Maple Syrup
1/2 c. Coconut Flakes
1/2 c. Ground Flax
1/2 c. Mini Chocolate Chips (If you NEED the chocolate, use THIS kind to avoid GMO’s and other icky things)
1 t. Vanilla extract

You mix it all together and refrigerate for about 30 min to let it firm up. Roll into 1″ balls and enjoy! 🙂 I keep them in the fridge for a cool sweet snack whenever the sweet-tooth bites, and yeah, they’re gone before we know it. 😉

As far as add-ins, I almost never use the coconut flakes, or the chocolate chips. Some of the things I use instead are:

Chia seeds
Walnuts or Pecans
Dried Cranberries

And the possibilities are pretty much endless. 🙂 So if you’re like me and after a meal you just feel like it should end on a sweet note, try these! You’ll love em!
